Canning adventure

So Kathryn and I decided that since we could get 25lbs of Roma tomatoes from our CSA that we should go ahead and get a box to do some canning. Both of us wanted some whole tomatoes as well as some sauce. So on July 29th we finally got together to do our big canning project. We thought we would have some down time so we invited the guys to hang out with us and maybe play some games in the down time. What we didn't know was that there wouldn't be any down time! We started blanching the tomatoes and cooking around 8:30 p.m. (we wanted to wait till the kids were in bed so we didn't have to deal with little hands and hot stoves.) Oh...we had also received several peaches from our CSA lady so we also decided to can some peaches. All in all I think we ended up with 10 jars of whole tomatoes, 4 jars of sauce (2 quarts & 2 pints), and 8 jars of peaches (3 pints, and 5 1/2 pints). It was a lot of fun to can together (I can't imagine doing it on my own) and I think we are going to try and do it again and this time only make sauce. :)

Just getting started

The onions for our sauce

Boiling the tomatoes

Then sticking them in ice water to remove the skins

Half way through the night...notice the stove (it's a little messy!)

Our peach syrup...yummy!

The sauce in the caning pot, ready to be processed

The finally products

And our finish time...that 1:58 a.m.!!!
